This recipe originally came from my Icelandic grandmother, amma. I converted this to healthier ingredients, but you know it hasn't detracted from the experience. I actually make these all year round! Ingredients 110 g vanilla protein powder 40 g oatmeal 40 g almond flour/oatmeal 1 tsp baking powder 125 g room temperature butter 80 g icing sugar 80 g sukrin gold 1 egg 1 tbsp plain cottage cheese or vanilla cottage cheese ½ tsp vanilla flavoring Method Mix together butter and sugar and whisk for 5-10 minutes in a food processor. The mixture will become lighter and fluffier. Mix protein, oatmeal, flour and baking powder in a bowl. Add eggs, cottage cheese and vanilla flavoring to the butter mixture and whisk further. Finally, add dry ingredients and whisk until everything is well mixed. Fold in the desired filling into the batter, e.g. 75 g dried cranberries 75 g chopped nuts/almonds 100 g chopped dark chocolate. Stir the filling into the cookie dough. Use a cookie scoop and place on a baking sheet lined with baking paper. Bake at 170 degrees hot air for 10-12 minutes. Cool completely before removing from the sheet.
